Summer New potato with oyster mushrooms

1 lb yukon gold new potatoes
1 large yellow onion
1/3 lb oyster mushrooms
1/2 bunch of dill
1/3 stick butter for roasting
salt, pepper to taste

Wash the potato. Place it in a pot and cover with water. Boil for about 30 minutes or until almost done. Strain the water, add butter or ghee and roast them for another 15 minutes over the medium heat. Season with salt, pepper. Add chopped onion and continue roasting for another 5 minutes. Then add washed chopped mushrooms. Roast for a few minutes. Turn the heat off and mix in chopped dill. Stir everything well. Cover with lid and let it sit for a few moments.
Tastes amazing with some sour cream or salsa on the side.
