green Lentil pilaf

2 cups of green lentils
2.5 -3 cups of water
2 tbsp coconut oil
1 onion
1/2 cup chopped raw beets
1 bunch cilantro
1 tbsp finely minced ginger
salt, pepper to taste
1 tbsp garlic salt
lime wedges to garnish

Rinse the lentils. Bring water with lentils to boil. Let it boil for a few minutes. Add chopped beets, reduce the heat, cover with lid and let simmer for about 10 minutes. Chop the onion, add minced ginger and sauté in coconut oil. Mix with lentils, add garlic salt, pepper and cook for about 5 more min. Put aside when the lentils are cooked, let it cool off. Mix in chopped cilantro. Squeeze a wedge of lime into individual bowl when serving the pilaf.
