habanero salsa verde

5-6 tomatillos
2 habanero peppers
3 garlic cloves
1 bunch of cilantro
1/4 cup extra virgin olive oil
1-2 tsp salt

Remove the shell off the tomatillos. Rinse them. Put whole tomatillos in a pot, cover with water and bring to boil. Wash cilantro thoroughly - best way to do it is submerging it in a bowl of water. This way all the dirt will end up on the bottom of the bowl. Peel the garlic. Seed habanero peppers (you can leave the seeds if you like it very spicy). For those with sensitive skin I recommend wearing gloves when seeding the peppers. And do not touch your face after you handle the peppers! Place cilantro, peeled garlic and habaneros into a food processor with a two blade attachment, add salt and olive oil. Pulse until it turns into a pesto like paste.
Strain the water off the tomatillos. You do not need to remove the skin as it is very soft. Add tomatillos to the cilantro mixture and pulse again until all is well blended. Let it cool a little and it is ready!
