asian stir fry with rice noodles

1 big bunch of purple kale
1 zucchini squash
2 roasted pasilla peppers
3-4 garlic cloves
1/4 pack of rice noodles
1 bunch of scallions
1 tbsp chickpea miso paste
4 tbsp soy sauce
1/3 cup hot water
2 tsp toasted sesame oil
3 tbsp coconut oil
Makes about 3-4 servings.

It is better to have everything washed and prepped before you start cooking.
Bring water to boil (about 1 QT). Add rice noodles and boil for about 5 minutes or until ready. Rinse in cold water and set aside. Peel garlic cloves and slice them thin. Pour the coconut oil into the wok or a deep enough pot. Roast the garlic until golden over medium heat. Dice the zucchini squash. Wash kale and chop it up. Add kale to garlic, stir fry for 2-3 min then add zucchini. Chop scallions and pasilla peppers (if you can't get the roasted peppers you can do it yourself in advance: wash the peppers and place them over the open flame, letting the skin burn and rotating them). Add to the veggies.
Dissolve miso paste in hot water in a cup whisking it with a fork. Mix it with soy sauce and add to the stir fry. Add rice noodles and sesame oil. Stir it with a fork to mix evenly and turn the heat off. It is ready to enjoy!
